Smoked & Braised Corned Beef
Directions:
- Go to the Land of Kirkland (aka Costco) or your favorite butcher shop and pick up a corned beef.
- Hit the outside with your favorite beef rub (such as Sucklebusters 1836 Beef Rub) and also dust it up.
- Place in the smoker at 250 until it reaches an internal of 160.
- After it comes off the smoker, bath toss it in a half sheet with a good amount of beef broth (cover the sides) and cover with tinfoil. Back in the smoker at 350 to braise until internal temp reaches about 200, then rest to 203*.
- Place back in the smoker at 350 to braise until internal reaches about 200*, then rest to 203*.
- Cut against the grain or shred depending on you're preference!
