Grab & Go Sheet Pan Protein Pancakes Recipe

One Batter, One Pan, Four Grab-and-Go Meals

Busy mornings call for smart meal prep, and this recipe delivers.

These Sheet Pan Protein Pancake Boxes, created by @kandbcooking, start with high-protein pancake batter baked on a single sheet pan, then sliced and portioned into four different grab-and-go meals using Secondz containers.

Sweet, savory, or balanced, this prep keeps your week flexible without adding extra work.

Sheet Pan Protein Pancakes Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1½ tbsp baking powder
  • 2 scoops (42g) unflavored collagen protein powder
  • ¼ tsp kosher salt
  • 1⅓ cups skim milk
  • 2 large eggs
  • ⅓ cup coconut oil, melted
  • ¼ cup powdered peanut butter, mixed with enough water to create a thick drizzle
  • Fresh or frozen blueberries
  • No sugar added milk chocolate chips

How to Make Sheet Pan Protein Pancakes

Step 1: Preheat & Mix

Preheat oven to 375°F.

In an expanded Drip EZ Secondz container, add:

  • Flour
  • Baking powder
  • Protein powder
  • Salt

Whisk together until evenly combined.

Step 2: Add Wet Ingredients

To the same container, add:

  • Eggs
  • Melted coconut oil
  • Milk

Stir with a spatula until fully incorporated. Small lumps are normal.

Step 3: Bake

Line a 9×13 baking sheet with parchment paper. Pour batter onto the pan and gently spread to fill the entire sheet evenly.

Divide the batter into four equal sections:

  1. Top one section with chocolate chips
  2. Top the second with blueberries
  3. Drizzle the third with peanut butter and swirl using a skewer or toothpick
  4. Leave the fourth section plain

Bake for 25–30 minutes, until lightly browned and a toothpick inserted in the center comes out clean.

Step 4: Cool & Slice

Allow pancakes to cool completely.

Slice vertically and horizontally to separate the four sections:

  • Cut the chocolate chip section into 4 pancake sticks
  • Cut the remaining sections in half to create 2 pieces each
