  • Surf & Turf Rub

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

  • Olive oil

Sauce & Assembly

  • Mexican table sour cream
  • 2–3 limes
  • Small flour tortillas

How to Make Surf n’ Turf Cajun Fajitas

Step 1: Prep the Veggies

Slice the peppers, onion, and jalapeños.

Using a Drip EZ Prep Tub keeps everything contained while slicing and seasoning — especially helpful when tossing veggies with oil and rub.

Toss vegetables with:

  • Olive oil
  • Cajun rub

Grill over medium heat until softened and the onions turn translucent. Remove and set aside.

Step 2: Grill the Skirt Steak

Season the skirt steak generously with Surf & Turf rub.

Grill hot and fast:

  • 3–4 minutes per side

You’re looking for a good sear and medium-rare to medium internal temp.

Remove from grill and let rest before slicing thin against the grain.

The Prep Tub also doubles as a resting and transport tray from grill to counter — keeping juices contained and cleanup simple.

Step 3: Grill the Shrimp

Season shrimp HEAVILY with Cajun rub.

Grill until opaque and slightly charred, about 2–3 minutes per side.

Shrimp cooks quickly, so keep an eye on it.

Step 4: Make the Cajun Lime Cream

In a small bowl, mix:

  • ½ cup Mexican table sour cream
  • 1 tbsp Cajun rub

Stir until smooth.

Squeeze in fresh lime juice to taste for brightness and balance.

Step 5: Warm & Build

Warm tortillas on the grill or stovetop.

Layer:

  • Sliced skirt steak
  • Cajun shrimp
  • Grilled peppers and onions

Drizzle with Cajun lime cream and finish with a squeeze of fresh lime.

Serve immediately.
